Good morning! well, update on yesterday: Lunch was a nice piece of lasagna taht my brother made, and mint tea
Dinner was home made chicken cacciatore over spaghetti. I do a lot of home cooking; its fun for me, and I can control what goes into what I fix.
To fix the cacciatore, I grilled up 4 chicken thighs on the George Foreman grill
While those are grilling, I use my electric wok that I bought from the local thrift store, and I put a couple of tablespoons of butterinto it, add a medium chopped onion, 3 cloves of chopped garlic, a a chopped sweet green pepper, let that cookuntil the onions are clear, add two cans of salt-free tomatoe sauce, a can of diced salt free tomatoes and a can of Italian stewed tomatoes, and let that start to simmer.
The chicken thighs should be done by this time, so pull them off off the grill *careful, they will be HOT!*
let them cool a bit, then peel the skin off of them and and cut the meat from the bones and chop it up, and add to the tomatoe sauce base. Turn the wok to simmer and get a glass bowl and add water to it, add the spaghetti to it, and nuke it in the microwave for 10, 15 or 20 minutes, depending upon your microwave wattage and how long it takes to get the spaghetti to al dente stage.
When the spaghetti is done, drain it, BUT DON'T RINSE IT. You want it hot, and you want the starch left on the noodles as this makes the sauce stick to the noodles.
Serve the spaghetti up on plates, ladle the sauce on top, and serve. This is a GREAT dinner!
If you have any sauce left, (a rarity in this house, as hubby LOVES this recipe, and he is the world's pickiest eater!) and can't use it up right away, it freezes well.
I use small electric appliances for cooking because I do not have a stove at this time. I have a small countertop oven , my GF grill (I use the GF grill for almost all of my meat cooking; in fact, this is my second GF grill over the past 7 years, so I get good use out of my cooking utensils), my electric wok, a nice hotplate, and my microwave. PLEASE do NOT innudate me with posts about how bad microwaves are! I have read all the reports, too...and its like anything else...everything in moderation.
I had a bedtime snack of PB&J sandwich and milk.
Hubby and I wandered of fto bed around 9:00 p.m. and he read for an hour while I worked on my best friends scarf on the purple KK loom. Looks like this might be a new bedtime ritual for us, to calm and settle before actually sleeping.
However, I slept through the alarms this morning.... :( ...that is NOT normal for me....hubby woke me up just before he left for work, and that was NOT good because that means he left without breakfast...made me feel bad beacuse I wasn't up to fix him something to eat. He isn't awake enough in the morning to fix breakfast that involves actual thinking....and I am usually together enough when I get up that I can either whip out toast and milk or scrambled eggs and juice before he heads out the door.
Because we had such an...interesting...time the past few months when it comes to employment and money, my larder is really low. I did go looking after he left and found some instant oatmeal stored away, so I am going to put the packages into a glass gallon jar and put it on the counter next to the electric tea kettle so he can fix himself some instant oatmeal when I can't seem to wake up....I am going to go look for my iron supplements today...I'll be I am anemic again...
Anyway, I was so tired that I didn't wake backup until 9:00 a.m., and that is LATE LATE LATE for me! Breakfast this morning was oatmeal(regular) and milk. Excercise will once again be housework (a note here -- we are re-arranging task areas in the house, so when I say housework, that involves switching boxes of stuff from one part of the house to another), and since I ate my oatmeal at like, 10:30 this morning (yes, I have been slow this morning), I may skip lunch and eat dinner with hubby today when he gets in at 3:30. I am thinking steak and taters with corn and peas mixed. I am also thinking of making a cake, too. Of course, he could want spaghetti and the rest of the cacciatore tonight, too.....
What's on my looms? The scarf for my best friend on the purple KK loom, ( I should have that finished tonight) and I am starting a pair of slipper socks on the blue KK loom. These are being done in a steel gray,(I call it silver), from my stash...this ia a heavy acrylic yarn from my stash that was on a mill end spool. I may be able to make a couple of pairs out of this yarn, as it seems that it isn't taking as much as I thought it would to make slipper socks. I also have a nice green that is a knid of wither green, is a very heavy acrylic, and that I think that hubby will like as slipper socks as well. I also have a nice heavey rug yarn in black that MIGHT make a pair, but I don't think there is enough to make a pair out of. I'll probably have to see if I can match it.......if not, I'll use it for something else.
Next project for the purple KK loom is a turquoise and eyelash silver scarf for an online friend-- I have her hat done already, and when I get the scarf done, I will take pics and post them before I send them to her...
The next project after that is to make myself a shrug on the purple KK loom....I seem to have a problem with staying warm these days....and I nee dto make something for myself besides a hat...*G*
next project for the blue KK loom is baby booties to go with the baby hats I made out of RedHeart Soft Baby SportWeight 3-ply 8009 Shaded Rose Twinkle yarn....this is yarn from my stash that I have had forever......when I get these done, I will see how much I have left...if I have enough, I will make more hats and booties...these are donations for the neonatal units at our local hospitals...I will also check and see if they need outfits donated for the babies who don't make it, as sometimes, the families don't have funeral outfits for the little ones that Pass the Veil. My mom can sew up the gowns, and I can make the hats and booties for matched sets.
Well, that's part of our plans for this year.....will post more laters!

January4th, Thursday, 2006
Up at 5:15 a.m. this morning after a good nights sleep helped along by an over the counter sleep aid last night...if Ben howled last night, we were too deeply asleep to hear it.
I do know this: I am not as worn out as I have been the past two mornings, and neither is hubby. So sleep was recuperative for us last night.
Its chilly this morning with a strong gusty breeze...I think I will wait for it to warm up a bit before I take a shower this morning.
Breakfast is a couple slices of oat bran bread with cinnamon butter and milk to drink. Yes, I am 42, and I STILL drink milk. I have ALWAYS drank milk. You will notice that I eat a LOT of dairy products: Cheese, cottage cheese, milk, yogurt, butter. I do NOT go with the conventional wisdom of depriving yourself of these important nutrients and taste.
You will also note that I do eat things that are viewed as NOT the best food choices in our culture today. I do have my reasons for this.
First of all, most of what we view as science fact when it comes to medicine is actually only a working theory that a field of expertise is trying to work out as they go along. This is the reason there are so many conflicting reports out there. Part of this is also the fact that the medical community is trying to get US put into a 'generic' type of box according to weight, height, and health, so they can prescribe us medications across the board when needed without worrying about differences in physical height and build and weight...and I have to tell you this now: That goal won't ever be achieved, because people are too varied, and some medications should not ever be prescribed to certain individuals. It looks like the medical establishmentis eventually and slowly is realizing this; however, this is something that we will keep an eye on and see just how it pans out.
You will also notice that I give a generalized list of what I am eating on a daily basis. I do not give portion sizes as such because I figure that if you are on a eating plan, you know portion sizes and are able to regulate your own intake.
Second, I am not the food police, and I am not here to take your hand and say you eat and only eat this much, and I will not tell you what you will and will not eat. I think that is silly and stupid and that if you go out and buy a bag of chips, you can read what the portion size is supposed to be and gee, measure out what it is you are supposed to have all on your own!!! WOW!...See the control you have??? See, you CAN control what goes into your mouth and you CAN control how much you eat of it by READING on the label how much you are supposed to have! What a concept! If we can depend upon ourseleves to get up and get everyone to work to school and go to work and then come home, get everyone to their after work or after school activities, I think we can depend upon ourselves to read portion sizes, and to be able to make sensible food choices.
One thing I do recommend: Invest in a GOOD food scale. This is a VERY good idea, as an ounce of meat versus an ounce of cottage cheese verus an ounce of chips or crackers is different in volume. I can eyeball my portions on meat, and I use a measuring cup for my cottage cheese because I LIKE dairy and I would eat three times what I am supposed to have, and I always either over- or under-estimate my portions on chips or crackers, as it varies from either potato chips or tortillia chips or crackers.
Also, a note on fast food: but the dollar menu items, and then eat only half that burger and half the fries...and order the orange drink AND the bottle of water instead of the soda. If you wish, order the kids meal. Unless you haven't eaten for 18 to 24 hours straight, this will get you to dinnertime without any fuss. I would recommend ( if you can tolerate it) ordering the 99 cent salad to go with it....that gives you a sense of eating something crunchy, and helps the digestion.
Note I said if you can tolerate the salad...that's because if you hev IBS, some salad greeens are not tolerated very well...in fact, I have been known to eat a salad I have made here at home from ingredients grown in my own garden and been in the bathroom for the rest of the day and all the next because my body reacts in a negative manner to such non-soluble fiber stimulation. I won't go into depth with what Fobromyalgia involves at thie time, as its way too early and I am thinking of that shower now that I have warmed up.....ta ta for now....

Jan 3, 2006, evening
Well, hi aagin. I did go backto bed and slept until 10:30, got up and did some things around the house, grabbed my purple KK loom and the scarf I am working on for my best friend and went to the chatroom I like....
For breakfast this morning, I had scrambled eggs, a biscuit with butter and OJ.
Lunch was kool-aid and home made venision goulash.
Dinner is a hamburger on a bun with MiracleWhip and pickles, mac and cheese, baked beans and tater tots with ketchup, and my ever-present mint tea to drink.
Excercise today was taking a walk outside.
So what have you done today?...*VBS*

New Year, New steps
Hello, everyone. This is my first entry into a brand new format. YAY! I haven't ever blogged before, so this will be interesting....
I'm tired this morning because one of the outside dogs, Benjamin Franklin Jefferson John (YES, that IS his name, and NO, I did NOT name him!!) decided that 2:00 a.m. in the morning was a great time to do his Hound-of-the-Baskervilles imitation...no amount of telling him to SHUT THE FRIG UP would quiet him...no other dogs were barking....needless to say, I was ready to tie his tongue to his tail by 3:00 a.m. I get up at 5:30 a.m. anyways, but that was just ridiculous...*yawns* however, Ben MAY have beem hearing the local cougar or bobcat move through the woods behind us....
Well, I have a few friends at a chat site who said they would follow this blog if I started one, mainly dealing with weight loss and health and my personal Journey...and as those of us who are wise know, *yawn and stretch*, everything that happens to us on a daily basis affects us in these areas.
To start this, however, I must tell you that I am 42, female, and that I weigh over 400 pounds. Part of the weight is medical problems, part is just me being plain lllaaaazee. I was told by someone at the chat that I was very brave for doing this, and maybe I am. I just know its time to do something abou this situation before it gets worse... I think this will be interesting as I am not going to follow any particular diet as such other than sensible eating habits (yes, that means I will have such things as chocolate cake and choccie chip cookies) and starting an excercise routine. I have a mobility disability, arthritis, IBS, asthma, and Fibromyalgia, so my excercise area and routine will be modified. I will be using the bed for those excercises that usually take place on the floor, for example...
As soon as I can find the latest pics taken of myself from this past year, I will post them here, so we can all see what my progress is.
I also do a LOT of craft work, so I will also be blogging that in here as well...I recently discovered the Knifty Knitter looms and made my 2006 Christmas presents with them...
I am also a practicing Solitary Witch, and I will be talking about that, too...and I am also starting to learn how to work with the Universe to provide good things for my life. *yawns again*
This morning, aside from Ben (the dog) waking us up an such an early hour, I have already had breakfast, scrambled eggs and biscuits with a bit of butter and OJ....and I am thinking seriously about going back to bed for awhile. If I go and try to do excercise on the bed, I am liable to fall asleep anyways...*giggles*....
I am also married, and hubby started a new job this week. He is having trouble adjusting to it...and I am having someone pick up a sleep aid for him today ( we have 1 car, and of course he uses it to get to work) because he has not been sleeping well that past two nights due to head chatter...and that dratted dog did not help things, either...whne hubby gets home, I have an errand to run, dinner to feed him, and then I am giving him a dose of sleep aid....and let him sleep deep and long.
SO, look for my pictures and for my continued story! and thanks for stopping by!
